I crave muffins. Kind of a lot. But I don’t allow myself to partake very often because, let’s be honest, they are just cupcakes parading around as some sort of breakfast food. I usually just have my smoothie and let visions of muffins dance around in my head. But every once and awhile, I live it up. This girls knows how to party, y’all. And last week was so cold and I was so hermit-y that I decided it was the perfect time to bake up a batch of homemade muffins. And most muffins are pretty tasty, but my favorite is the mighty Morning Glory muffin. It’s one of those wholesome-y types filled with all sorts of nuts and dried fruits and carrots and other delectable things. So, Saturday morning I whipped up a batch of these beauties. And they did not disappoint. So I stayed in my pajamas a little longer than usual and enjoyed a few of these fresh from the over. They went perfectly with my morning coffee and the paper.
If you should find yourself in an I’m-craving-muffins place, I would recommend these. There’s lots of ingredients which is a little annoying but well worth it once all is said and done.
