An Arty Party

I had my own lil’ private Oscar viewing party. And of course I needed something to delicious to shovel into my pie hole while I sat on the couch and lost four hours of my life. I was craving a big, melty, cheesy pile of spinach and artichoke dip (preferably from Houston’s) with tortilla chips to use as a conduit. But, I’m still trying to drop a few lbs (and I had partaken in a fabulous brunch that morning) so I knew I needed to scale things back a bit in the calorie department. Enter the easiest dip ever. It took all of four minutes to put together and I made some homemade baked corn chips to go with it because they are just as good as store bought and way better for you. But use whatever dippers happen to be your jam these days. Recipe below.
Spicy Artichoke Dip with Cilantro
1 can artichoke hearts, roughly chopped
1/4 – 1/2 cup pickled jalapeƱos + some juice (adjust according to your personal taste for spice. I happen to like a lot of it).
1/4 – 1/2 cup fat free greek yogurt
handful of cilantro
Puree everything together in a food processor/blender. Enjoy. I threw some salt and pepper in at the end but I pretty much do that with everything I eat.

Have you had the artichoke dip at Freeman’s? It’s crazy amazing. Seriously, I think about it all the time.
