Guys, I’m kind of freaking out. It’s already the middle of August! I hate that feeling of summer slipping away. No matter what I always feel like I didn’t have enough fun, didn’t spend enough time outside and this year, didn’t eat enough summer corn. It’s a terrifying feeling, frankly. Especially for a lady who lives and dies for corn. I once infamously (or famously depending on how you look at it) ate THREE cobs of corn as an after school snack at the tender age of six. (lay off of me, I was starving). Anywho, summer ain’t over yet, theres still time to take advantage of the corn bounty at your local greenmarket. I really love corn cut fresh from the cob with whatever other vegetable you have lying around plus a little grated garlic, balsamic vinegar and good olive oil. It’s true what they say about the simplest preparations being the best ones. Of course, there’s still always room for recipes that require a little more effort. Here’s some corn-y delights that I’ve been eyeing. Let’s make the last few weeks of summer really count. What do you say?

This is quite a lovely collection of corn showpieces! In fact, I had a corn and tomato salad last night – much like you, driven by a desire to use the bounty of summer before it fades away.

This all looks lovely and I’m going to make every single recipe! I have a ton of corn to use up (I typically end up freezing a lot of it), and I’ve been making a ton of cornbread (with creamed corn mixed in) because it’s one of the only things my 2-year-old will eat. Have a lot of tomatoes, jalapenos, oregano, cilantro, garlic and onions from my garden to use up, so I’m going to make a big batch of roasted corn salsa tonight!

Yeah, I’m officially obsessed with all things corn and tomatoes until they pry them from my cold dead hands (or until they start tasting gross and winter-ish again). Have you made the corn and tomato pie? It’s on SK and you srsly HAVE to.

well, this was not a good post to read early in the morning… now i’m starving and craving corn. too early? maybe not.
