Watermelon Salad on My Mind

I have been devoted to watermelon for a long time. To be honest, it’s one of my top 5 favorite things to eat. I’m pretty sure I could kill a whole one all by myself. But I recently had the most delicious savory watermelon salad at Fonda in Park Slope. I can’t stop thinking about it! Does this ever happen to you? You go out to eat and innocently order your dinner. Only to find out it is one of the best things you’ve ever tasted and the deliciousness stays with you for days, even weeks, after. You become obsessed. Said salad consisted of diced watermelon, cucumber and queso fresco, pepitas, lime juice and olive oil. Nothing too crazy or complicated, but it was just perfect for dinner outside on a warm night. I have to make this salad! And a fantastic recipe like that gets a girl’s mind a’wandering… what other scrumptious watermelon salads are out there just waiting to be created and then promptly tossed down the old gullet?

I become obsessed with figs during fig season. I haven’t found really good ones on the East Coast yet, but there was one farmer in San Diego I used to get them from last year and I probably totally looked like an addict running away from his stand at the farmer’s market with them. But now that you’ve shown me all these watermelon photos, I think I may need to seek some of that out too.

These look delicious, Amy! BTW I think our date night should be at a beergarden-type venue. Thoughts?
