Oh My Goodness

Y’all. I really outdid myself this time. I made some delicious cookies last night. Seriously. Delicious. Remember when I made Raisinet cookies? Well, I’m still kind of enamored with the idea of candy inspired cookies so last night I tried my hand at Almond Joy cookies. Whooeee! They don’t taste exactly like an Almond Joy, but they are still amazingly scrumptious. I mean how can you go wrong with coconut and chocolate?!

Almond Joy Cookies (makes about 25 big cookies)

1 and 1/2 cups all-purpose flour
1 teaspoons baking soda
3/4 teaspoons salt
1 and 1/2 sticks unsalted butter, room temperature
1 cups packed light-brown sugar
1/2 cup granulated sugar
2 large eggs
1 teaspoons pure vanilla extract
1 cup semisweet chocolate morsels
3/4 cup shredded coconut
3/4 cup chopped almonds
Directions:

Preheat oven to 375 degrees. Whisk together flour, baking soda, and salt. Beat butter and sugars until pale and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla, then flour mixture. Beat in chocolate, coconut and almonds.

Spoon onto parchment-lined baking sheets, spacing about 2 inches apart. Bake until edges are golden, 12 to 14 minutes. Let cool on sheets set on wire racks for 10 minutes. Transfer cookies to racks; let cool completely.

    I just want to keep trying these cookies with different candy bars. I might look crazy the next time I leave the grocery with a bag full of nothing but candy, but others will understand the quest.
