Fact. Tabouleh is Tasty.

I am a huge tabouleh fan but have never attempted to make it. Until last night. And now that I know how easy it is, I’m hooked and it’s officially in my repertoire now. Plus, as a bonus, your kitchen smells so earthy and fresh after chopping a bunch of parsley and mint. And you can make mint tea with the left over mint. Or better yet, mojitos.

1 bunch of parsley chopped finely
1 bunch of mint chopped finely
2 tomatoes cut into small pieces
1 cucumber, diced
1 bunch green onions, chopped
juice of 2 fresh-squeezed lemons
approx. 1/4 cup of olive oil
1 cup bulgar
sea salt
fresh ground pepper

-soak a cup of bulgar in a cup of water for about an hour
-meanwhile chop herbs, cucumber, green onions and tomatoes
-mix everything together and add lemon juice and olive oil
-add salt and pepper to taste

It’s a great make ahead thing and I happen to enjoy those quite a bit. Add a dollop of hummus and some pita and you’ve got dinner.

    Thank goodness I’m about to eat, otherwise showing delicious pictures like these between meals is cruelty.
