I Miss Cooking

As you all know (because I won’t stop talking about it) I’ve been living a nomadic lifestyle for the past few months. One thing that has drastically changed is I have not been cooking that much. A) I’m single and cooking for one is always a bit tricky. B) I’ve been staying at my friend Lesley’s and/or living in the tiniest apartment in NYC with an even tinier kitchen. C) I don’t have any of my things. D) I’ve been working some late-ish hours. E) Sometimes take-out is just easier.
But the cool, rainy weather yesterday coupled with a pity party I was throwing in my honor left me needing a big warm hug in the form of a hearty soup or stew made by yours truly. I am a big fan of the lentil so I whipped up some lentil and tomato stew with kale. It was not too shabby, friends. And it was darn pretty, too.
As I often do, I improvised this recipe as I was cooking it. But here’s the basic gist and you could easily adapt it with a variety of vegetables or different spices. I’d like to attempt a curry based soup and add some sweet potatoes. Maybe next time.
-saute half an onion and 3 cloves of garlic in a tablespoon or two of olive oil until translucent
-add half a can of tomatoes (whatever kind you like)and break them up with a spoon
-add about 3/4 cup of green lentils, some fresh thyme and some broth (I used vegetable)
-bring to a boil and simmer for a good 20 minutes
-add chopped kale and keep simmering until lentils are cooked through
-top with a delicious cheese of some sort (I chose asiago)
-feel all warm and cozy inside and realize that yes, fall is officially here

I love soups in fall, and this one looks de-lish and just the thing for feeling warm-cozy. (As for the nomadic/tiny kitchen/not having anything to cook with, I’ve walked that walk…it gets better and I’m still nomadic and kind of love it
).

Here’s something that might be helpful. I also lived in NYC and had the smallest kitchen ever. I created a cookbook for one, so that you don’t have to keep excess ingredients. It’s called “Table for One: Perfectly Portioned Meals for the Single Cook.”
