Southern Sandwiches

Even through out my 6 years in New York City, I have always remained a southern soul. And, in honor of my many weeks in my sweet, sweet southern hometown of Atlanta, Georgia I made sure to partake in some of my favorite southern sandwiches: pimiento cheese and good ol’ tomato. Both are perfectly simple, summery and delicious. A tomato sandwich is about as basic as it gets; a slice or two of ripe tomato, mayo (on both sides) and salt and pepper. I’m getting hungry just typing it. Pimiento cheese is a bit more involved so check back tomorrow for a delicious recipe so you can make it at home. It is the perfect picnic food, after all.

I’ll go along with everyone else and say I’m glad I’m not the only one out there who loves a simpe tomater sammie. My husband thinks I’m wack-a-doo.
