Berry Cherry Mint Popsicles

We picked up these cute popsicle molds a few weeks ago for two reasons. One. I couldn’t resist the idea of coming up with delicious popsicle concoctions all summer and two because they are just so darn cute. I have to admit they sat around for awhile, begging to be put to use. And then Emily’s post inspired me to bite the bullet and give them a try.
We always have frozen berries in the freezer. If you haven’t tried them they are a delicious (and guilt-free) sweet snack or dessert. I used up all the half opened bags we happened to be some raspberries, cherries, blackberries and blueberries. You could easily use fresh berries/cherries here and I had a few of those in the fridge so I threw them in as well. I pureed them with my hand blender in a bowl with some chopped fresh mint (that I grew myself!), a tiny bit of agave nectar (or honey would work fine) and some water to thin out the mixture. I filled the molds and waited a few hours. The finished product was a lovely deep magenta color and it was absolutely delicious. Now that I’ve conquered the first attempt I can’t wait to try other fun mixtures. Think of the possibilities: mango and pineapple! kiwi and strawberry! chocolate pudding (remember pudding pops!?) yogurt and fruit! arnold palmer! Okay, I need to calm down.
*note: the instructions said to leave room at the top of the mold for the popsicle to “expand.” I left too much room and most of the popsicle bottoms came right off leaving all of the goodness in the mold. We dumped them into bowls and they were still delicious as a granita type treat BUT next time I will not leave as much room at the top. Luckily one did stick so I was able to snag a nice photo.

This is the second post I’ve read in blog land about home-made Popsicles… Now I know I must get me the supplies and make some too!!
