A warm weather treat

I have been craving pineapple salsa like nobody’s business. I made a huge batch on Saturday night that we enjoyed first with tostitos, and then later alongside grilled chicken and mojitos. Seemed like a nice meal to have after such a lovely spring day. It was delicious and there’s a bunch leftover so I’ll continue to enjoy it’s sweet ‘n spicy goodness all week. Lucky me.
It’s a super simple recipe with only a few ingredients. The hardest part is all the chopping which admittedly does get a little tedious but it’s worth it. Here’s the breakdown I used but this recipe is easy to play with and change:
-1 fresh pineapple, chopped into cute small lil’ squares
-2 jalapenos (maybe less if you don’t like spicy but I happen to love it), finely chopped
-1/2 mango, chopped into those cute lil’ squares
-1/2 red onion, chopped nice and small (you don’t want a big bite of onion)
-1 handful of cilantro, roughly chopped
-juice of 1 lime
-dash of salt
