A Magical Machine

Friends, I got a brand new, shiny slow cooker for my birthday. I love the idea of dumping some stuff in before I leave for work and coming home to a nice, warm meal. It’s all so magical! Imagine, all of these dry goods + frozen corn + some spices + leftover Thanksgiving turkey and 9 hours later a delicious bowl of yumminess in the form of turkey chili. Behold the mojo of the slow cooker.

Crock Pot Chicken (or in my case turkey) Taco Chili (recipe here)

1 onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5-oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder
24 0z. (3) boneless skinless chicken breasts (I substituted leftover turkey)
canned chopped chilies (about half a can)
your fave toppings: sour cream, shredded cheese, cilantro, tortilla chips, pickled jalapenos, limes, etc.

Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in.

    Looks delicious! I just adore my crock pot – so handy! It’s lovely to come home after a long day and smell your dinner cooking!

    I love my slow cooker! It’s a miracle worker. I try to remember to set up slow cooker meals on days when I know I’ll be working late. It’s so lovely to come home and find the house smelling delicious.

    oh slowwwww cooooooooker…love it…try stuffed peppers and zucchini (with ground turkey pinenuts and raisins!) and of course beef stew…killer…red beans…ooooo…congratulations!oxoxdeb

    amy. c’mon. i mean it. you have to stop posting these things that make me want to scream “meee tooooooo!”. hubs and i are big fans (big fans!) of the magic of the crock. we use it all the time now that winter is here and have cooked some tasty vittles for sure. i am doing a coconut curry soup with lentils this week. oh yes.
