Onions are better caramelized

So there’s a restaurant called Jane here in the city that we used to go to occasionally and they have the tastiest little flat bread appetizer that Anthony and I fell in love with. It was a thick flat bread topped with caramelized onions, goat cheese and maybe a drizzle of truffle oil or something. It was super simple but super freakin’ delicious! I decided to make a pizza version of this tasty treat for dinner on Friday night. I’ve been wanting to do a homemade pizza type thing ever since this post on Heart of Light. So I gave it a whirl. (*I do have a disclaimer though, I bought the pre-made dough. I know, I should be ashamed of myself. I am lazy (but lovable!) and next time I am totally doing the homemade dough thing. I promise.) I caramelized the onions and added some pancetta chunks to them. I spread the pizza dough out on a cookie sheet, I sprinkled some mozzarella cheese and then spread the onion and pancetta mixture all over. I then topped it with crumbled goat cheese, a drizzle of olive oil and some black pepper. Baked it to a gooey, melty perfection and served it with a simple arugula salad. Man it was good. I guess I’m kind of awesome sometimes.

    Mmmmmmmm…the caramelized onion pizza is my favorite.

    And I use the storebought dough too, sometimes. It just depends on how well organized I was the day before.

    i highly recommend the gnocchi at jane. i was there years ago (probably 3) and i still remember the taste. heaven!
